Salad doesn’t always have to be boring green!
With this recipe you have combined many intense and colorful colors such as dark red, orange, pink-orange, red, light green in one salad.
That makes eating salad more fun, doesn't it? We think the salad makes you want spring and summer!
FOR APPROX. 2 PEOPLE YOU NEED:
- 2 cups beetroot, cooked and chopped
- 1 ½ cups of filleted orange pieces
- 1 cup filleted grapefruit pieces
- ½ cup whole Peppadew® cherry peppers
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh lime juice
- 1 cup small fennel bulb, cut into very thin slices
- 1/3 cup red onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup fresh coriander
HOW TO DO IT:
Put all the fruit, fennel and onion in a bowl. Add lemon and lime juice and olive oil and mix well. Season with salt and pepper, garnish with coriander and serve cold.
Tip : As an additional (creamy) element, you can also add ricotta to the salad.
