Indian curry with jackfruit recipe

We have a great love for curries! That's why we are always looking for delicious and authentic curry spice mixes that make it easy, quick and delicious to prepare a curry. We are very happy to have found this one. Below you will find a recipe for a delicious curry with coconut milk that you can adapt as you like.

FOR APPROX. 4 PEOPLE YOU NEED:

HOW TO DO IT:
Sweat the onion pieces in the pan until translucent. Then add the carrots and let them sauté together for a few minutes on a medium to high heat. Then add the peppers and zucchini, as well as the jackfruit pieces.

Tip: You can chop the jackfruit pieces with your hands or a knife as needed.

Then you can add the curry spices to the vegetables and then deglaze with the coconut milk. Let everything simmer together for about 10-15 minutes. Depending on how liquid you want it to be, you can add a little more water. Finally, simply add the pre-blanched sugar snap peas, let everything simmer together for 1 minute and the delicious curry is ready!

SERVING SUGGESTTION:
Rice or naan bread go perfectly with the curry! And chopped peanuts are a great topping !

Tip: Depending on your taste, you can also use other (seasonal) vegetables. And for those who like meat: simply swap the jackfruit for chicken!
