FOR APPROX. 4 PEOPLE YOU NEED:
- 2 cans Kumaio® - Jackfruit pieces
- 2 cans Kumaio® - coconut milk
- 1 onion, chopped
- 3 carrots, chopped
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 pack of sugar peas, pre-blanched
- 3 tablespoons Kumaio® - curry spice mix
- Salt & pepper to taste
- Vegetable oil for frying
HOW TO DO IT:
Sweat the onion pieces in the pan until translucent. Then add the carrots and let them sauté together for a few minutes on a medium to high heat. Then add the peppers and zucchini, as well as the jackfruit pieces.
Tip: You can chop the jackfruit pieces with your hands or a knife as needed.
Then you can add the curry spices to the vegetables and then deglaze with the coconut milk. Let everything simmer together for about 10-15 minutes. Depending on how liquid you want it to be, you can add a little more water. Finally, simply add the pre-blanched sugar snap peas, let everything simmer together for 1 minute and the delicious curry is ready!
SERVING SUGGESTTION:
Rice or naan bread go perfectly with the curry! And chopped peanuts are a great topping !
Tip: Depending on your taste, you can also use other (seasonal) vegetables. And for those who like meat: simply swap the jackfruit for chicken!
