Hearty, sweet, spicy, fresh... we love it!! A pizza that you want to enjoy with your best friends and a good glass of red wine...
FOR APPROX. 4-6 PEOPLE YOU NEED:
- 500g cauliflower, grated and steamed
- 2 eggs
- 100g Parmesan, grated
- 4 tbsp Peppadew® cherry pepper brine (liquid from the can)
- 2 tbsp parsley
- 1 tbsp almond flour
- A handful of rocket
- 100g boiled potatoes
- 200g Brie in slices
- 100g Peppadew ® cherry peppers in strips
- 200g mozzarella
- 1 tbsp balsamic vinegar
HOW TO DO IT:
Mix the cauliflower, eggs, parmesan, Peppadew ® cherry pepper brine, parsley and flour and stir until you have a dough. Roll this out into a pizza shape and bake for 10-15 minutes at 180° C. Then take the dough out of the oven and top with brie, potatoes, Peppadew ® cherry pepper strips and the mozzarella. Then bake the pizza in the oven again until the cheese melts. Sprinkle the finished pizza with rocket and a little balsamic vinegar and serve hot .
Tip: Instead of potatoes, caramelized onions also taste great!
